Chickpea Salad

Hey everyone! We’re back today with a really easy and refreshing chickpea salad!
It only takes a few minutes to make, and works great as both a side dish or a main meal, served with rice or even some roasted veggies. You can customize it however you like, so feel free to switch it up depending on what ingredients you have at home, or are maybe interested in trying. Let us know how it goes! 

Chickpea Salad



-1 Can chickpeas

-1 Juicy tomato

-½ Cucumber 

-½ Bell pepper

-¼ Red onion

-1 Tbsp chopped parsley


-vegan feta

-Chopped kalamata olives

-Chopped mint (fresh or dry)

-Red pepper flakes



-2 Tbsp olive oil

– ¼ Tsp white or apple cider vinegar 

– ½-1 Tsp lemon juice

-Salt to taste



First, drain and rinse your chickpeas (you can save the liquid from the can for any aquafaba recipes later if you like). 

Finely dice your other ingredients and combine in a bowl with your chickpeas. 

Whisk together your dressing, and toss in with your chickpeas, and season to taste. 

Voila, you’re done!
