Pesto Sandwiches

Happy Sunday everyone! A few weeks back we held a poll on our instagram story to see what kind of sandwiches you all would be interested in. Turns out we will be sharing the recipe for all of them eventually, but the most voted for is finally here: The Pesto Sandwich! We will include the recipe for the pesto below, but you can also find it in its own post here. Have fun and enjoy! 

Pesto Sandwich

 

Ingredients:

Pesto Sauce: 

-2 Cups fresh basil 

-¼-½ Cup good olive oil

-2 Tbsp Lemon juice

-2 Cloves garlic

-3-4 Tbsp pine nuts, sunflower seeds, or pumpkin seeds (this is optional, but offers a good cheesy flavor and texture to the pesto)

-salt to taste

 

Grilled Veggie Style Sandwich Ingredients:

-Gf sandwich bread

-Pesto 

-Vegan butter or mayo

-Your choice of veggies (Eggplant, Zucchini, Tomato, Onion, Peppers, Tofu and/or vegan cheese)

 

Caprese Style Sandwich Ingredients:

-Gf Ciabatta style bread

-Pesto

-Tomato

-Fresh basil

-Baby greens

-Tofu and/or vegan cheese 

 

Steps:

Making The Pesto

Wash and pat dry your basil, and peel your garlic. Add everything into a food processor and blend until smooth. Pause occasionally to scrape down the sides to make sure you get everything! We recommend adding half the oil to start, and then continuing to add a little bit more until you get it nice and smooth (you may not need all of it).

 

Making The Sandwiches

For the Caprese style, start by lightly toasting your bread in an oven or over a buttered/oiled pan. If you are using cheese, take the time now to melt it over one of your slices of bread. On the other slice, apply a generous amount of your pesto. Slice your tomatoes, wash and dry your greens, and assemble the sandwich and you’re good to go! 

For the grilled veggie style, start by thinly slicing your selected veg, coating with a thin layer of oil, and roasting on a sheet in the oven at 400 degrees fahrenheit for about 20-30 minutes until the edges start to turn nice and roasty and golden brown. Take out the veg and season with salt and pepper to taste. 

Next, spread some butter or may on your bread slices, and toast in the pan until nice and crispy. Melt your cheese on a slice if you’re opting for it, spread your pesto on the other slice, and layer your veggies to whatever thickness you desire. If you want more pesto flavor, you can toss your roasted veggies in a bowl with it first before assembling your sandwich.
